barbeque/buffolo wings
want a sweet and spicey recipe. anyone know a good one? emphasis on sweet.
One of the simplest and tastiest marinades I know of for chicken wings is:
Honey
Ginger
Garlic
Lemon Grass
Coriander
Sweet Chili Sauce
Oyster Sauce
Sliced chilli (optional)
Sesame oil and sesame seeds (also optional)
Chop up the bits you need to chop up
Mix everything together - warmed honey makes it easier to mix and pour
Lay meat in a single layer in a flat plastic container with a tight lid
Pour the marinade over and let marinate for a few hours, turning container upside down a few times
This works well with prawns, veal, pork, fish, chicken.
Important note: Unless you are going to cook the marinade or use it all by basting the meat whilst it is cooking, discard it. It is NOT a safe move to remove the meat from the marinade, serve the meat, then pour the excess marinade over the cooked meat. (Especially dangerous with chicken)
If you want to use the excess marinade as a sauce, transfer the excess to a pot and bring to the boil, thicken slightly with either cornflour or arrowroot.
