Spicy Chicken Cannelloni

Invented this one when I was not feeling too good and needed something spicy but only had a few bits and pieces I hanging about.

Dice a large onion and cook in a hot pan with about a teaspoon of butter or oil.
Add 250gm minced chicken (can use chicken pieces or chicken breast cut into small pieces)
Stir until cooked and add around 1/4 cup of sweet chilli sauce
Simmer with a little extra water for about 20 mins until most of the liquid has evaporated.
Use half a packet of fresh lasagna sheets (I used the San Remo ones which are a little smaller than the normal lasagna sheet but fit perfectly into a small baking dish I have)
Dip each sheet individually in water then spoon filling into the centre of the sheet then roll the lasagna sheet into a cylinder
Place the rolled up cannelloni with the seam side downwards into a lightly greased baking dish (spray on oil is perfect for this)
Once all rolls are done open a bottle of your favourite pasta sauce (or make your bloody own like I normally do - its easy)
Top with a little grated cheese (about half a cup at the most).
Cover the top very loosely with a sheet of foil and bake about 20-25 minutes in a moderate oven - 180C
About 5 minutes before its ready remove the foil and discard. Sprinkle a little parmesan cheese over the top if liked
Return to oven for about 5 minutes to brown the top

You can do the same recipe with beef mince and leave out the chilli sauce for a more authentic Italian style dish.
You can also just sprinkle the parmesan on at the beginning of the cooking time and not bother with the foil if you don't mind the topping going a little dark and crunchy (i actually prefer it like this)

Instant noodle is the way when you are sick in the bed and still have to cook youself. Not that I have been sick laterly.

Note: Call in sick and staying in at home playing EQ does not count :P
