Sorry Free, somehow this request slipped under the radar.
OK. Some essential requirements first:
1. An oven
2. A pie dish
3. A mixing bowl and stuff
Start out with making the base with a shortcrust pastry - its an easy one and should be able to find recipes for it - if not - i will post one when i next have a computer at home. You can also cheat by buying ready made pie crusts or buy things like rolled sheets of frozen shortcrust pastry in the freezer section.
Next is the filling. This can be pretty much anything with this sort of base
1. Fruit based
2. Meat and gravy based
3. Alternatives
For instance apple pie.
Prepare around 3-4 granny smith (green cooking apples), peel and core and add to a saucepan with 1 cup of boiling water along with as much sugar as you like (if you like sweet, use around 1/2 cup - less depending on taste. I use brown sugar) and cook until softish (depends on if you like visible pieces or mush) At this stage I like to add spices, so use about 1/2 teaspoon of allspice and stir well
Allow mixture to cool a little and fill pie case. Cover with another sheet of pastry and prick the top with a fork to give about 6-8 sets of holes. Firm down gently around the edge with the tines of the fork to combine the top of the pie with the base and make a good seal to prevent leakage. Sprinkle a little sugar over the top of the pie (I use brown sugar mixed with a little cinnamon)
Bake in a moderate oven (around 200) until pastry is crispy looking and golden (30-35 mins I think)
You can pretty much use this sort of recipe for any sort of fruit or combinations of dried fruit and cottage cheeses or anything really.
Meat based pies - chop your meat into small bite size pieces and trim any fat or gristle - combine in a fry pan with diced onion and brown - toss in any other ingredients like tomato or carrot or whatever and your stock, herbs and spices and allow mixture to simmer until meat is tender. Thicken up the liquid into a gravy (I cheat here and use cornflour - its brilliant for a non lumpy sauce) Fill the pie case and bake as above - you can substitute the top and make up a mashed potato and cheese topping.
Enjoy- pies are soooooo easy

The thing about pies is if the filling is good the pie is good - if it tastes crap when you put the filling into the pie it will come out of the oven the same. Also with meat type things - anything like a stew, casserole etc make fantastic pies. Also remember left over meat, like roasts or sausages or chicken are great pie stuffings too.
Also fetta cheese, asparagus spinach - see earlier pie recipes for stuffs

Its all about practice - your first few times cooking stuff, you may not do too well. But then it alll just falls into place. Start out cooking simple stuff is the first rule. Learn to do grilled steak or chops or sausages and 3 veg, then move on to making your own gravy and putting together your own meatballs. Then move on to casseroles, stews, soups and stuff like spaghetti bolognaise or hungarian goulash. Before you know it you will be excellent. (BTW I make a great spag bol, goulash, stroganoff) Pies aren't at all hard to make.
Another idea is to book into a cooking course. A lot of blokes are doing that because they suddenly find they are having to look after themselves and can't cook worth a damn and are slowly starving to death. In Sydney you can do cooking courses with electricity and gas suppliers, through those evening college/interest groups. Sydney Fish Markets run a cooking school to teach you how to cook fish. Check around and start off small. Anyone can cook, its just a matter of taking the time and doing it.
