1kg of Premium Beef Mince
2 finely grated carrots
2 finely diced onions
cracked black pepper
2-3 tablespoons tomato paste
1 well beaten egg
1 cup bread crumbs
2-3 tablespoons of chopped chives
Mix all ingredients very well - the only way to do it is by hand.
Press firmly into a lightly greased meat loaf tin
Bake slowly at about 190C for around 30-40 minutes until cooked
This recipe can be altered to include a couple of finely diced zucchini - just add a bit more breadcrumbs to bind the mixture
Can also change the mince to a mixture of pork and veal mince. Slice a green apple and place rings on top of the meat loaf.
The same recipe can be used for rissoles or meatballs
