Aussie Christmas Ice Cream

2 lt good quality ice cream
1 cup of Bailey's Irish Cream
250ml Cream
1 Lions Christmas Cake

Crumble the Christmas cake into a bowl and add the Bailey's, allow to soak for 30min. Leave the icecream out of the freezer for about 20min until it softens. Mix the softened icecream, the cream and the Lions cake mixture together, place in a container that hold approx 4lts and re freeze.

Christmas desert for everyone - but the kids!

Hmm refreezing icecream works huh?

Apparently yeh - have read a few other refreazing recipies recently. Would be a way interesting flavour.

Hell my deserts normally range from bourbon and coke to bbq chips.

Nothing nearly as complicated as the above :)

The thing is with refreezing ice cream is that you reallyt dont let it defrost much past soft enough to mix through - if it does thaw too far - you either have to do a fair bit of rebeating of the mixture to bring it back to light and fluffy or you are stuck with a fairly dense solid mass with large ice crystals.

aye this is true, also the added cream assist in avoided that solid mass u mention :)
