Ingredients:
1-1.5kg Lamb, any cut that will cook at 200C in the oven in an hour or so. New season would be nice of course.
pecorino (hard Italian Cheese)
parmesan
salt
pepper
olive oil
fresh roma tomatoes
fresh garlic
fresh broadleaf parsley
Basically like a Lancashire hotpot.
1. Oil the bottow of your pot, add a little salt.
2. Cut potato into VERY thin slices and leave in a bowl of water.]
3. Place layer of potatoes at botttom of pot.
4. salt pepper to taste, garlic, olive oil, tomatoes, parsley and both cheeses (LOTS!!)
5. lay lamb around this layer covering the whole dish (obviosly cut lamb p to suit your dish!
6. another layer of salt, pepper, garlic, oil, tomatoes, parsley and both cheeses
7. the rest of the potatoes in a layer on top of that
8. yet another layer of salt, pepper, garlic, tomatoes, parsley and both cheeses (last and LOTS!)
9. finally a generous helping of olive oil right accross the top
200C In oven for an hour or until lamb (cut dependant) is cooked. Can put under grill at end if top needs a little extra heat for colour.
