ok take a large bowl and set next to chopping board to put everything in. (very large)
use 2 large potatoes per person, (I usually use 4 very large baking potatoes for 2 of us) wash them good, leave the skin on and dice them to bite size. throw into the bowl.
1 onion of your choice, I prefer white or red. cut into bite size pieces and throw into the bowl.
2 handfuls of sliced jalapenos and juice. into the bowl.
1 lb Hot Italian Sausage pull apart into bite size pieces and into the bowl.
1 palm of cyanine pepper into the bowl.
A couple pinches of black pepper into the bowl.
A couple pinches of salt into the bowl.
4 table spoons of butter or margarine (your choice) into the bowl. I usually do very heaped spoons.
A handful of chopped parsley and a handful of chopped cilantro into the bowl.
4 large cloves of garlic grated into the bowl. more if you really like garlic, we do.
Sliced and diced bell peppers in your favorite colors, usually total of about 1/3 pepper, into the bowl.
¼-1/2 pint cherry or grape tomatoes sliced in half and put into the bowl. you dont have to use them if you dont like them.
Mix it all up nice and good.
Pour enough EVOO (Extra virgin olive oil) into the bottom of a warming pan. We use the ½ size not the full tray.
Then cover with your favorite shredded cheese.
Cover the top with aluminum foil and put it on a grill at 350 -400 for 45 minutes to an hour.
Dinner is served.

they are good
we make them every Saturday. they can also be made ahead of time and frozen. just take them out and thaw then throw on the grill. we also found that using a table top oven (turkey roaster) works great to make them in too. just takes a bit longer. about hour and half to 2 hours. just keep checking them. you can also make them with things like sage, thyme and basil using sweet sausage instead of the hot sausage and peppers. throw in some cherry or grape tomatoes and its even better. we have used chicken, sweet sausage all sorts of variations. how ever you like it, do it. they are so good and if you use paper plates Tavrah, its even easier cleanup...hehehe we do! I love it.
