This recipe is not for anyone with diabetes, but my husband loves it so I make it for him
2 1/2 cups flour
2 1/2 tsp baking soda
1 1/2 tsp salt
1 cup chopped pecans or walnuts
3/4 cup oil
1 cup white sugar
1 cup brown sugar
3 eggs
2 cups zucchini ( grated peel on )
1 cup milk
4 TBSP cocoa
3/4 cup chocolate chips ( optional but without them it's not very chocolatey )
1/2 cup raisons ( soaked in hot water for 10 minutes to plump up )
Sift dry ingredients, mix in nuts. Beat sugars together add oil and mix in 1 egg at a time until smooth ... Add Zucchini
Alternate dry ingredients with milk until all is mixed well.
Pour into 9x13 cake pan ( greased and floured ) or muffin tins ( greased and floured ) makes approximately 18 muffins. Instead of flour you could use cocoa or sugar to line pans with, but there is already a lot of sugar in this, I personally use cocoa but my mom uses flour.
Bake cake in 350 oven for 45 minutes
Bake muffins in 350 oven for 20 - 30 minutes
Cool .. Ice .. Eat .. Enjoy
