2 cups cream
1 cup whole milk
1 cup sugar
1 vanilla bean
Take half the sugar, vanilla bean, cream and milk and slowly bring it to a simmer. Remove from heat once it has started boiling. Whisk together remaining sugar with your egg yolks and slowly whisk in the Hot milk/cream mixture. (slower is better, to avoid scrambling of your eggs).
Take your desired creme brulee dishes, fill them, and place them in a water bath. cover with foil but leave 1 corner to let the steam vent. Bake at 325 Fahrenheit for approximately 30 minutes.. or until the mixture sets. Remove from the water bath and let cool in the refrigerator.
Makes about 10 Portions.
Once cool, dust the top with sugar and break out the blow-torch. Serve with fresh berries if you have them!
