Mi cuit Salmon w/ Basque "Piperade" and potato croquettes

Salmon
6oz fillet of salmon with skin on
2 cups olive oil
Salt & pepper

Piperade
2 Red bell peppers
2 Green bell peppers
1 Large onion
1 head fennel
4 Cloves garlic
1/2 cup Tomato Paste
Few sprigs of thyme
2 bay leaves
Salt & pepper

Potato Croquettes
2 Large Russets
1/4 cup butter
Parsely
Chives
1tbsp Corn starch
1/2 cupPanko
1/2 cupShaved Almonds
2 Egg whites
Salt&pepper
