Satay Sauce - Best EVER

Firstly a lovely marinade for marinating your skewers prior to grilling or barbecueing, Following it is the absolutely best Satay sauce recipe EVER!

Marinade
2 teaspoons turmeric
1 tablespoon sugar
pinch salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
4 tablespoons oil
1 tablespoon fish sauce
2 cloves crushed garlic

Combine all marinade ingredients in a bowl and mix well. Lay skewers in a shallow tray and pour the marinade over them. Leave in fridge for a few hours, turning the kebabs occassionally.



SATAY SAUCE (NAM JIM SATAY)

1 small onion chopped
1 tablespoon finely chopped lemon grass
1/2 teaspoon shrimp paste
1 teaspoon dried chillies
2 cloves garlic
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 coriander roots chopped
1 cup coconut milk (may need extra)
1 teaspoon vegetable oil
150grms roasted ground peanuts (can cheat and use crunchy peanut butter)
2 tablespoons sugar
1 tablespoon tamarind juice
pinch of salt

1. In a food processor combine onion, lemon grass, shrimp paste, chillies, garlic, cumin, coriander and coriander roots with enough coconut milk to moisten.

2. Heat oil in a saucepan and gently stir fry this mixture for 1-2 minutes. Add remaining coconut milk slowly, stirring all the time, over a medium heat.

3. Reduce heat to low and add peanuts, stirring well so as not to separate. Add sugar, tamarind juice and a pinch of salt. Taste and adjust sugar or salt if required.

If mixture is too thick, add extra coconut milk, stirring well until combined. If mixture is too thin, simmer gently to reduce down.

NOTE: Peanuts and coconut milk burn very easily. TAKE THE TIME TO COOK THE SAUCE SLOWLY.

Stir fry some veggies of your choice and whatever meat you are using or tofu and add sauce at end of cooking time, stirring sauce quickly through the meat and veggies. Do not allow to stick. Serve over steamed rice.
