Perfect Chocolate Cake
Perfect Chocolate Cake
This is for Pania, and anyone who wants a good, not to sweet, cake. It also has great presentation.
Cake:
1 cup unsweetened cocoa
2 cups boiling water
2 and 3/4 cups sifted flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup butter, softened
2 and 1/2 cups sugar
4 eggs
1 and 1/2 teaspoons vanilla
Filling:
1 cup heavy cream
1/4 cup confectioners's sugar
1 teaspoon vanilla
Frosting:
6 ounces semi-sweet chocolate pieces
1/2 cup light cream
1 cup butter
2 and 1/2 cups confectioner's sugar
For the cake:
Preheat oven to 350 degrees. Grease well and slightly flour 3, 9-inch round by 1 and 1/2 inch deep layer pans.
In medium bowl, combine cocoa with boiling water, mixing with wire wisk until smooth. Cool completely. In separate bowl sift together flour, soda, salt and baking powder. In large bowl beat butter, sugar, eggs and vanilla with electric mixer at high speed, scraping bowl sides occasionally until mixture is light and fluffy, about 5 minutes. At low speed beat in the flour mixture (in fourths) alternating with cocoa mixture (in thirds), beginning and ending with flour mixture. Do not overbeat.
Divide batter evenly into pans, smoothing tops. Bake 25 to 30 minutes or until surface springs back when gently pressed. Cool in pans 10 minutes. Remove from pans and cool on racks.
For the filling: Whip cream with sugar and vanilla until the mixture forms stiff peaks. Refrigerate.
For the frosting: In medium pan over medium heat, combine chocolate pieces, cream and butter, blending with a wisk. Add 2 and 1/2 cups of confectionery sugar. Set over ice, beat until mixture holds its shape.
To assemble: Place one layer top down on a plate. Spread with half the cream filling. Top with another layer and spread with remaining cream. Top with remaining layer. Frost sides first, than top. Refrigerate at least one hour before serving.
I think this tastes best made the day before you plan to serve it.
