Mum's Caramel Tart

Promised this recipe to someone ages ago and forgot to post it. Just found it.

Place 1 egg yolk, 3 tablespoons plain flour, 225gm (1/2lb) brown sugar, 1 cup milk, 3 tablespoons water, 2 tablespoons butter, pinch of salt, vanilla, into a saucepan.
Stir over low heat until thickened.
Pour into pie case when cool. (make a shortcrust pastry case or buy a ready made one if you are lazy)
Beat 1 egg white and gradually add 1/2 cup white sugar and 1 tablespoon of gelatine dissolved in a littl hot water and cooled. Beat a few minutes and pile on top of caramel.

This also works exceptionally well as mini tarts. Get a packet of honey snaps biscuits, place 1 biscuit over each depression in a patty cake or small muffin tin (grease the tin). Place in warm oven until the biscuits soften then gently push the biscuit into each depression in the tin until a cup shape is formed. Allow to cool then fill and top with meringue
