EASY Mexican Chicken

Not sure if you aussies can get pre-roasted chickens in the grocery mart.. but its the easiest and fastest way to go... if not, you can make the same recipie by using any left over meats, or cooking boneless chicken, pork or beef the same way ( just takes longer )

in a crock pot ( can do it in a skillet if you like, but you actually have to stand and attend it that way... bleah ) :
cube a 2lb cooked chicken into bite sized chunks ( or simmer meat-0-your choice till very tender with a bit of water, onions, salt & pepper and omit stock and additional onions )
add:
1 cup chunky salsa
1/2 to 1 cup each, onion & green bell peppers ( to your taste )
1/4 cup green taco sauce
1/2 cup stock
1/2 tablespoon Cumin
1/2 tablespoon Chili Powder
Salt & Pepper

cook till peppers and onions are tender,
add fresh cilantro to taste ( I like a lot )
I guessed at these measurements, when I do it, its just a handfull of this and a few shakes of that... adjust anything to your tastes...

perfect for raid nights, can simmer on low for hours without supervision, leftovers keep well.

With Flour Tortillas, easily rolled into a "at the keyboard" burrito, Corn Tortillas make nice tacos with shredded lettuce and a squeeze of lime, or spooned over chips w/ cheese and sour cream for yummy nachos =)
