Beef Stroganoff

An easy fast and tasty beef stroganoff. Can be made in about 20 minutes.

300gm Rump steak sliced very thinly in strips (I find one of the easiest ways to slice raw meat thinly is to cut it with a sharp knife when it is semi-frozen)
3 large white onions, cut in half then slice thinly
300gm of mushrooms. Button mushrooms are OK but field mushrooms have a much better flavour. Once again slice thinly.
Nutmeg
Coarse ground black pepper
Chives
250ml Sour Cream
Boiled Rice

Put the rice on to boil and whilst it is cooking slice up the meat, onion and mushrooms.
Heat oil or butter in a heavy based frypan and when ready fry the meat very quickly until just cooked. If you are using a small frypan do the meat in two batches. Remove the meat from the frypan.
Add a little more oil to the frypan and when hot fry the onion until golden - do not allow to burn or go brown. Remove the onion from the frypan
Now cook the sliced mushrooms until tender and add the meat and the onions to the pan.
Add some chopped chives, nutmeg and black pepper and allow to cook gently for about 10 minutes.
Add the sour cream and mix well with other ingredients. Bring back to temperature but do not allow to boil.
Drain the rice and mix a little butter through the rice.
Serve around a cup full of cooked rice on the plate with the stroganoff mixture on top. Garnish with freshly snipped chives.
An ideal accompaniment is a nice garden or green salad
