Spinach Pie

Line a pie plate (i prefer a rectangular one) with 5-6 sheets of Fillo pastry.
Defrost 2 packets of Spinach - or cook your own
Mix into the spinach 1 cup of crumbled Greek Fetta, black pepper, juice of 1 lemon, 1 teaspoon lemon rind, 1 finely chopped cloves of garlic, 2 tablespoons pine nuts and if liked, add a small amount of finely chopped Blue Vein cheese.
Pour mixture into the lined pie plate
If liked, asparagus can be added to the pie - I prefer to use asparagus cuts
Cover spinach mixture with another 5-6 sheets of Fillo pastry.
Bake in moderate oven around 190C for 20 mins
*prepare Fillo pastry as per manufacturers instructions on the packet

i made something very similar to this except it had MEAT, was like chopped beef in little cubes, was very very nice though
