These are quick and easy to make, nice for the kids to take to school or for a church gathering, or just because.
1 cup icing sugar
2 egg whites
1 cup coconut
1/4 tsp vanilla
red / green cherries
Beat icing sugar and egg whites over boiling water until coating forms on side of double boiler. Remove from heat, add coconut and vanilla. Drop with a teaspoon onto cookie sheet and decorate with the cherry bits. Bake at 275 degrees F until light brown.
