Merry Christmas Cookies

My family likes my homemade jam in these, of course my jam is sugar free :) as these have a ton of sweet to them anyway, I can have only 1. But you can use any jam you prefer.

2 cups margarine
2 cups icing sugar
2 tsp vanilla
2 eggs
5 cups flour
1 tsp salt
1/2 tsp baking soda
jam as required.

Cream butter and icing sugar. Beat in vanilla and eggs. Mix together flour, salt, and baking soda. Blend into creamed mixture. Chill if very soft. Roll dough out to 1/4 inch thickness. Cut into your fav Christmas shapes. Bake at 350 degrees F for 8 - 12 minutes. Until lightly browned. When cool put 2 together with jam in centre. Ice as desired.

You can leave them as single cookies too and add anything like chocolate chips to the dough or cherries, or sprinkles.
