Potato Bake

Use up the last of that Xmas Ham or use bacon

1. Wash about 6 or so potatoes, don't bother to peel them if you like the skins
2. Thinly slice the potatoes and place the first layer in the base of an oven safe pan or casserole
3. Cut peeled onions in half then thinly slice and place a layer of onions over the potatoes in the casserole dish
4. If using bacon, dice and gently fry, then sprinkle over the onion layer - if using ham, slice up and shred over the onion layer
5. Sprinkle a tablespoon or two of tasty grated cheese over the ham.
6. Keep building the layers, finishing with a potato layer.
7. Mix together around 250ml milk and 250ml of cream (or whatever quantity you are making up)
8. Season the milk and cream mix with cracked black pepper and finely chopped parsley and salt (if you must, but you really don't need salt)
9. Pour this mixture over the potato layers in the casserole. The liquid should be almost covering the final layer of potatoes.
10. Bake in a 180C oven for around 1 hour. Test the potato with a fork at the end of this time. The potato should be very soft. If it needs it, give it another 20 - 30 mins.
11. Sprinkle a good layer of breadcrumbs mixed with parmesan cheese over the top of the bake and finish with a final 5-10 mins in the oven until top is crusty and nicely browned.

NB If the potato is burning during the cooking time, cover with a sheet of aluminium foil until done, then do the topping.

You can also add a variety of things to this - celery, mushrooms, capsicum, etc. Can also use leftover chicken or turkey in place of the ham. I also like to add dijonnaise mustard or horseradish to the milk mix
