Lemon Squares

You will need :

1 cup graham crumbs
1/2 cup flour
1/4 cup packed brown sugar
1/4 cup cold margarine ( unhydronated if you can get it if not no worries )
1 package ( 250 g ) Philadelphia cream cheese softened
1 cup granulated sugar
2 eggs
2 TBSP flour
3 TBSP lemon zest ( divided )
1/4 cup fresh lemon juice
1/4 tsp baking powder
2 tsp icing sugar

Line an 8 inch square pan with foil ... Extend the foil over the sides.

In a medium bowl mix the first 4 ingrediants until they resemble coarse crumbs. Press into the pan .. Bake 15 minutes

Meanwhile:

beat the cheese and sugar till well blended. Add the eggs and 2 TBSP flour. Blend in 1 TBSP Zest and lemon juice and baking powder. Pour over the baked crust. Bake 25 - 28 minutes or until centre is set. Refridgerate 2 hours.

Sprinkle the icing sugar and remaining zest over the top before cutting.

You know Tav... I can't find Graham crumbs here in oz.... I know, it's a travesty

Taken from that site - Graham crackers are called Digestive Biscuits in England but we have it recommended elsewhere on the site to use 1/2 digestive biscuits and 1/2 crushed rich tea biscuits to most closely make graham cracker crumbs.

We usually use crushed up Arrowroot biscuits for the base.

Good old Arnotts Milk Arrowroot eh. Can't get much more Ausie than Arnotts... Oh wait.. It's foreign owned now just like everything else Australian.

if you cannot find Graham crumbs ... use chocolate cookies. Just crumble them up fine :) works wonderfully.

Arnotts makes a brand of 'digestive' biscuits, cant remember what theyre called.

Or alternately, the choc biccies by arnotts works wonders for cake bases ... especially cheesecake.
