Chicken and Mango Salad

Was feeling adventurous tonight and threw this together. It turned out quite nice so though I'd share :D

Whisk up the following ingredients in a bowl to make marinade:

Teaspoon of minced garlic
Teaspoon of brown sugar
Few shakes of garlic salt
Sprinkle of parsely leaves
3 or 4 good squirts of lime juice

Take two chicken fillets, skin off and chop of the fat and yucky bits, roll them in the marinade and put into a container with a lid, then pour over the left over marinade - leave to marinade for an hour or so in the fridge (give it a shake 2 -3 times to really get the chicken covered).

Cook up the chicken in a frypan and while it's cooking make the salad, using:

Lettuce (I just broke up with my hands)
Cucumber sliced
2 mangoes cut into bite size pieces

Once the chicken is cooked, take it out of the frypan and cut into strips or chunks whichever you prefer. Return it to the frypan on high heat to really warm it back through then put on top of the salad

Drizzle with lime juice, add a sprinkle of coriander and enjoy!

This is excellent :) I made it 2 ways cause I had only 1 mango & it's definately NOT mango season here, so I tried it with peaches as well ... excellent ! Thanks, my mom and sister also now have your recipe :)

My mom said she made it with strawberries and really liked it ... but then she's addicted to strawberries :) gonna try it with them myself one day :) We eat lots of different salads here, as we add fruit sometimes to them, my grandson's love them too :) no problem getting them to eat raw veggies either, cause they think the fruit is dessert lol .. they are only 3 and soon to be 5 so whatever works :)
