Found free wifi at an airport and thought I'd type this in!
2 cans of chick peas
Handful of tomatoes
2 small lemons
1 small white onion
1 medium sized red onion
Handful of fresh basil
Small handful of fresh mint
Bag of roasted pine nuts won't hurt
Extra virgin olive oil
Salt
Drain chick peas, fry one can in pan with dash of olive oil, crush other can into bowl. Chop tomatoes and onions very finely and add to bowl along with the juice from both lemons, the fried chick peas, a good gulp of olive oil and as much salt as you can handle. Mix it and leave in fridge for a lil bit. Before eating it, chop up mint and basil coarsely and mix in with roasted pine nuts.
Pretty sure I forgot something I added in there, but can't think of it... goes very well with a flounder type fish filet breaded with parmesan.
