awesome roast spuds

I found this nigella lawson recipe for baked spuds last xmas. you can use vegetable oil as opposed to the fat, it's so popular with my kids i have to sometimes make 2 baking dishes full.

when it comes to roasts and spuds especially , counting carbs just doesn't come into the equasion. Counting spuds does ,aka how many can i stuff in each baking dish.
