Souvlaki style Chicken

You need.

1/4 Cup Olive Oil
2 table spoons lemon juice
2 teaspoons of origano leaves
1 heaped teaspoon minced garlic
Thigh chicken fillets - you CAN use breast (hehehe, i said breast) fillets, but breast meat tends to dry out easier than thigh meat.




Cut the thigh chicken fillets into small pieces.
Put them in a tupperware contair that has a lid.

Get a bowl, and throw in your Olive oil, lemon juice, origano leaves and minced garlic. Whisk them up. This is your marinade.

Add your marinade to your chicken, covering all pieces well.

Put the lid on your container, and shake it well to get the the marinade through the chicken pieces.
Hold the lid just in case, you dont want raw chicken flying all through you kitchen

Put in the fridge, and allow to marinade for at least 1 and 1/2 hrs.
(you can take it out and reshake the container occasionally.. I do).

Preheat your frying pan, you dont need oil, there's plenty of it in your marinade.. I use a large electric non stick frypan personally.

Once heated, pour the chicken in. Cook well.. I even go so far as to lightly burn some pieces, and they turn out the best.


I serve with oven baked chips, peices of Pita bread, and Tzatziki.
You can also, roll up the meat into Pita Bread, with salad, onion, and tzatziki, but thats just obvious, now isnt it


I could post a recipe for tzatziki, but cant be bothered,
you can just buy it :) - of the bought Tzatziki's, I like Chris's the best
