Miruwin's Thai Recipes - Dessert

Thai Fried Bananas

8 firm bananas
2 eggs
1 cup sugar
3 tablespoons rice flour
1 cup shredded or desiccated coconut
butter

Beat together eggs, flour and sugar
Cut bananas lengthwise
Dip bananas in egg mixture until well coated and allow excess batter to drip off
Roll banana in coconut
Melt butter in a skillet or small frying pan and saute until golden brown, turning once
Serve with cream or icecream


Bananas in Syrup

250 ml of water
1 cup sugar
6 large bananas
2 tablespoons rum
single cream

Bring water and sugar to boil in a large saucepan, stirring constantly until all sugar has dissolved.
Brush down sides of saucepan with a pastry brush to remove sugar crystals
Boil for 5 minutes without stirring
Turn heat to low and add bananas
Do not stir
Cook for a further 10 - 15 minutes until bananas are softened (check after 10 minutes)
Remove from heat and add rum, stirring gently and making sure not to break up the bananas
Return to a very low heat and cook a further 5 minutes
Serve in a shallow dish, spoon over a little syrup and top with cream.
Eat either hot or cold
(Warning: as this is a toffee mixture, it will be very hot and will retain heat for some time, so do not attempt to eat them immediately)


Thai Fruit Salad

1/2 cup caster sugar
1 cup water
1 tablespoon lemon or lime juice
rind of 1 lemon or 2 limes
pieces of pineapple (can use tinned)
1/2 a pawpaw
1/2 a honeydew
1/2 a rockmelon
fresh or tineed lychees
fresh mint for garnish

Place sugar and water into a medium sized saucepan and stir over medium heat without boiling until sugar is dissolved.
Add rind and juice and bring to the boil.
Boil without stirring for 10 minutes or until the syrup has thickened slightly
Cut pieces of fruit into chunks, cubes or slices. The melons and pawpaw can be shaped into balls using a melon or butter baller if required.
Peel and seed lychees
Remove the rind with a slotted spoon or fork and discard.
Set syrup aside to cool
Place the prepared fruit in a large bowl, cover and chill for at least 30 minutes.
Just before serving, pour over enough cooled syrup to coat the fruit and carefully fold through fruit.
Garnish with sprigs of mint leaves.

Note: Rambutan, star fruit, mango, or other fruits in season and half limes can also be used.


Coconut Rice

1 cup jasmine rice
1 cup coconut milk
2 teaspoons sugar
salt

Wash rice well, until water runs clear. Drain and set aside.
In a large saucepan, boil coconut milk, sugar and salt.
When it comes to the boil, add rice and turn heat down.
Cook for 12-15 minutes or until rice is done.

This rice can be used as a dessert or to accompany curries.
