Carrot Cake

As requested from the Melb BBQ yesterday

2 eggs
1 cup of Castur Sugar (normal sugar works fine this is what i normaly use any way)
1/4 cup of oil (vegi oil is best)
1/2 teaspoon vanilla essence (or to taste)
1 cup of Plain flour
1 teaspoon Bi-Carb soda
1/2 teaspoon mixed spice
1/2 teaspoon salt
1 1/2 cups of finely grated carrot (lightly peeled)
1/2 cup of chopped Walnuts
1/2 cup chopped Pecans



Combine the eggs, sugar, oil and essence, then sifted the dry ingredients in a basin, stir in the carrots and nuts into the mixture and mix well. Pour the mixture into a well greased 20cm ring tin.

Cook in a moderate oven for 45-50 mins or until cooked when tested.

the Icing

Spread with a cream cheese frosting made by beating together 30gm of softened butter, 60gm cream chesse (Philadelphia works best) and 2-3 tablespoons of icing sugar

Try adding a good squirt of lemon juice to your frosting and then sprinkle some finely grated lemon peel over the top when iced and you virtually have my recipe.

The lemon juice in the frosting really makes a great improvement.
